Our Jon On The Vermillion Coast

Sunset at Collioure. If there had been any doubts as to how this stretch of coastline had got its name they are automatically dispelled by a Royal -Flush of rouge. The earthen hues of the soil and schist on the surrounding hillsides has morphed into a similar colour to that glass of Rousillon in my hand, as I sit on the terrace at the `Templiers Hotel,` overlooked by a dramatic Vaubin fortress. Below me in the bay, two little traditional high-prowed fishing boats jostle against each other in the slight swell. Their bright yellows and reds, almost fluorescent in intensity in this light. They also reflect a time when all the villages around here relied on fishing, especially for anchovies, sardines, dorados and squid, rather than tourism
